Using Tofu as a Salad Dressing Base?
It’s high in protein, low in fat, and works especially well as a creamy, dairy-free emulsifier.
For the best effect, go with soft or silken tofu. Firm tofu is too dense and chewy.
The method is quite easy: steam the tofu, then blend it up in a blender or food processor until smooth. That’s your base.


One of my favorite flavored tofu dressing salad is:
Shredded chicken, topped with tofu dressing, seasoned with a mix of peanut butter, chili oil, olive oil, salt, and black pepper. Toss everything together.
The tofu paste gives the whole salad a silky mouthfeel and a gentle sweetness, with more protein less fat and no sugar at all. Sounds great, isn’t it?
